RECIPES

Tart Crust:
Ingredients
2.5 cups white flour
2 t sugar
1 t baking powder
1/2 t salt
2 sticks margarine

Directions
Mix dry ingredients, then combine margarine in with hands to make a soft dough. Split dough and place each half in tart, cake, or pie pans. Fill with filling below.

Tart Filling
Ingredients
3 eggs, beaten
2 T granulated sugar
1 T cinnamon
3/4 t ginger powder
3/4 t cloves
1/2 t salt
28 ounce can sweetened yams, drained

Directions
Add dry ingredients to eggs. Crush yam pieces in palms. Add to mix. Beat and whip ingredients with electric mixer for a minute or two. Pour mixture into shells and bake at 350 degrees for approximately 32 minutes.

Baked Bread Loaves for Making Stuffing/Dressing
Ingredients
6 cups white flour
2 T sugar
2 t salt
2 T margarine
2 T quick/fast rise yeast
2 1/4 cups warm water (around 125 degrees)

Directions
Blend 1/2 of the flour with remaining dry ingredients. Add margarine. Add water. Mix and slowly add remaining flour. Knead. Set aside for 20 minutes, covered with a moist, warm towel. After bread has risen, place in two loaf pans. Bake bread at 350 degrees for approximately 35 minutes.

Let cool. Slice bread into slices. Toast on oven rack at 425 degrees until crispy. Slice each piece of toast into 8 pieces. Use to make stuffing, below.

Stuffing/Dressing
(Prepare half the stuffing at a time, as most stove top pans will not be able accommodate the bulk of the toast pieces at once.)

Ingredients
1/4 cup margarine
1.5 t sage
1 t marjoram or thyme
Black pepper to taste
1/2 recipe toasted white bread cubes, above
2 t chicken bullion or bullion cubes, dissolved into 2 cups water

Directions
Place margarine to melt in deep skillet or Dutch oven. Add pepper and herbs. Toss in bread cubes slowly, turning in pan. Slowly pour in chicken broth. Mix cubes around until moisture is even throughout.

Biscuits
Ingredients
3 cups flour
1 T baking powder
1/2 t salt
1/3 cup margarine (5 T & 1 t)
1/2 cup water
1 egg or 2 egg whites, beaten

Directions:
Mix dry ingredients. Add in margarine, water, and egg and mix. Knead. Add flour or water if moisture level is slightly off balance. Cut into 10 pieces. Place biscuits on baking sheet and bake for 16 to 18 minutes.
